Spinach Balls Appetizer as Demonstrated on WBTV Charlotte, North Carolina

An easy and delicious appetizer to prepare. It can be prepared in advance and baked just before you are ready to serve. Or, baked and reheated. Great for parties and gatherings, as they are bite-sized.

You will need:

  • 1 package of frozen spinach (15 oz.)
  • one onion
  • eggs
  • butter
  • thyme
  • Parmesan
  • day-old bread

As demonstrated on WBTV / Bounce TV in Charlotte, North Carolina:

SPINACH BALLS

(1)  15-oz. package chopped frozen spinach, thawed and squeezed dry

1 sweet medium-sized onion, finely chopped

2 eggs, beaten

¾ cup butter, melted

¼ teaspoon dried thyme

¼ cup grated Parmesan cheese

*1 cup of day-old bread, crumbled 

Preheat oven to 350 degrees.  Combine ingredients and then chill mixture for at least ½ hour.  Form into balls and place on a parchment-lined baking sheet.  Bake at 350 degrees for 10 to 15 minutes.  Serve warm from the oven, or at room temperature.

*For a gluten-free option, use gluten free bread.
