A Celebration Pound Cake Recipe

Celebrating February with Love, Friends, Family, and Pound Cake – That’s a Wrap!

One Recipe; Many Memories

February felt like the sweetest month of the year — a time when love took center stage! A time to celebrate in its many forms. Between Valentine’s Day and a flurry of birthdays, each occasion became an excuse to gather around the table and share something delicious. In February, the spotlight was on one timeless classic: the homemade pound cake.

It was a long cold and snow-filled month here in the northeast. On those cold days, there’s just something cozy about filling your kitchen with the scent of a cake baking in the oven. Each get‑together — from my mom’s birthday, my friend next door, and my little girlfriend in the neighborhood’s birthday. Each called for its own version of this classic dessert – in ‘heart’ form. What started as a simple recipe turned into a series of creative twists for each special occasion.

This pound cake recipe was given to me by my friend Sherry many moons ago. The vanilla version is in my cookbook, MaMa Mia Cucina. It guided my first bake, just as it did years ago. Although tradition is at the ‘heart’ of this recipe, this month I celebrated by experimenting: one cake studded with orange zest and chocolate for a bright, tangy flavor; another rich with vanilla and mini-chocolate chips for my young friend; and finally, a lemon pound cake dusted with powdered sugar for my mom’s 91st birthday dinner.

A Delicious Pound Cake Recipe

There’s a reason this dessert never goes out of style — its simple ingredients create a rich, buttery cake that’s tender yet satisfying. Here’s the base recipe:

Ingredients:

  • 3 sticks of unsalted butter, softened
  • 8 oz. cream cheese, softened
  • 3 cups sugar
  • Dash of salt
  • 6 large eggs
  • 3 cups cake flour
  • 3 teaspoons vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
  2. Cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk flour and salt. Gradually combine with the wet mixture.
  5. Stir in vanilla. Pour batter into pan and bake 60-75 minutes, or until a toothpick comes out clean.
  6. Cool for 10-15 minutes before inverting onto a serving plate.
  7. Cool completely, wrap in foil and chill in the refrigerator overnight for best results.
  8. Unwrap and top with your favorite glaze or fruit compote. Serve.

Three Delicious Variations for Every Celebration (add these ingredients to the original recipe as add-ins)

  • Lemon: Add the zest and juice of 1 whole lemon. Dust with confectioners’ sugar.
  • Chocolate Orange: Mix in 1 cup of chocolate chips, 1 Tablespoon of orange zest and 1 teaspoon orange extract. Dust with confectioners’ sugar.
  • Vanilla + Mini-Chip: Add 1 cup mini-chocolate chips. Dust with confectioners’ sugar.

Personal Chef Tip: This recipe calls for cake flour. If you don’t have it in your pantry, you can make your own. For each cup of all-purpose (sifted) flour, remove 2 Tablespoons of all-purpose and replace with 2 Tablespoons of cornstarch. Mix together.

Honoring Family and Tradition Through Food

Each version told its own story — a reflection of the person we were celebrating. What stayed constant was the tradition of gathering, laughing, as we shared slices of pound cake around the table. Food like this isn’t just dessert — it’s connection, memory, and love baked into every bite. It’s a reminder that the best celebrations are ‘heartfelt’.

Food has a beautiful way of linking generations and friendships. With each cake, I thought of my Nuno, who was born on Valentine’s Day. Each heart-shaped cake captured a memory – a memory of baking cookies with my daughters and writing love notes for their lunches. Then there were the dinner celebrations with family and friends – all through the years.

So, keep baking, keep sharing, and keep celebrating the people who make life sweet — one cake at a time, making life a little sweeter for yourself and for those around you.
