Fennel and Orange Salad Recipe
A Fresh Crisp Flavorful Salad

The combination of fennel and orange is actually delightful. Fennel has the flavor of licorice, and served raw, it is loaded with fiber. The oranges are the perfect marriage. Fennel will oxidize, so the juice from the oranges will prevent the oxidization. This is a fresh, cleansing, crisp salad, making it a great accompaniment to chicken or pork, especially.
Slice the fennel thinly using a mandolin, or, if you’re good with a knife, that works well, too. Same with the oranges. Peel them, and then slice thinly. Being that there are only a few ingredients in this salad, you want good quality here, so a nice olive oil is important. You will taste it. A grinding of black pepper is also quite nice. Sometimes, if I have them, I will add in pitted cured black olives (not pictured here). That’s it – enjoy!

Ingredients:
- 3 Oranges
- 1 Fennel
- ¼ Cup Extra-Virgin Olive Oil
- Salt
- Black Pepper
Instructions and Recipe:
Take 1 Fennel and cut down to the bulb, removing the fronds. Wash the bulb. Slice thinly using a knife or a mandolin.
Remove the orange peel from the oranges and slice thinly. Place both the orange slices and fennel slices into a salad bowl and toss with the olive oil, a pinch of salt and generous grinding of black pepper. Serve.
