Spinach Balls Appetizer on WBTV / Bounce TV Charlotte, North Carolina

After all of the baking these past six weeks (or so…) let’s switch it up to some ‘greens’ and revert to an appetizer as we prepare our holiday menus. It’s almost time to prepare the Turkey!

As demonstrated on WBTV / Bounce TV in Charlotte, North Carolina:

SPINACH BALLS

(1)  15-oz. package chopped frozen spinach, thawed and squeezed dry

1 sweet medium-sized onion, finely chopped

2 eggs, beaten

¾ cup butter, melted

¼ teaspoon dried thyme

¼ cup grated Parmesan cheese

*1 cup of day-old bread, crumbled 

Preheat oven to 350 degrees.  Combine ingredients and then chill mixture for at least ½ hour.  Form into balls and place on a parchment-lined baking sheet.  Bake at 350 degrees for 10 to 15 minutes.  Serve warm from the oven, or at room temperature.

*For a gluten-free option, use gluten free bread.
