The Caesar Salad is easy to prepare with simple ingredients, yet classic. Add grilled shrimp, filet of beef, or chicken as a protein source, if desired.
Below is a recipe for one of my favorite and flavorful Caesar Salad recipes, as published in “MaMa Mia Cucina ~ A Flavor of Good Food and Good Family” (page 32). Pick and choose the combination of ingredients, or choose all of the ingredients in creating your very own creative Summer Salad!
CAESAR SALAD
Salad Ingredient Suggestions:
Greens: Romaine, Arugula
Vegetables: Asparagus, Fennel, Cauliflower, Zucchini (note: grill the vegetables with a brushing of olive oil and sea salt for added flavor)
Fruits: Lemons, Olives
Cheese & Tofu: Shaved Parmesan
Meats & Poultry: Grilled Chicken, Grilled Filet of Beef
Shellfish: Grilled Shrimp, anchovies or white anchovies
Eggs: (in the dressing)
Dressings: Classic Caesar
* A NOTE on Dressings: They may be purchased and ready-made, or create your own. I chose the Classic Caesar dressing, and created the recipe taken from Page 32 of “MaMa Mia Cucina” below:
Clasic Caesar Salad Dressing
3 anchovy fillets, minced making a paste
1 egg
1/4 cup olive oil
3 tablespoons chopped garlic
2 teaspoons worcestershire sauce
1/2 teaspoon salt
a grinding of freshly ground pepper to taste
1/4 teaspoon dry mustard
1/2 of a lemon, juiced
To prepare the dressing, in a blender, whip the egg, adding the olive oil slowly as a drizzle until thickened. Add the anchovy paste, garlic, worcestershire, salt, pepper, dry mustard, and the fresh lemon juice. Blend well, combining flavors. Pour prepared dressing over salad, and sprinkle with freshly grated Parmesan cheese and top with croutons. Serve!
This recipe may be doubled or tripled, depending on the size of your salad.
